Ingredients

  • 40ml Unpeated New Make Malt Spirit
  • 15ml Vermouth
  • 10ml mineral water
  • 1 Dash of celery bitters
  • Orange zest

Method

Fill a mixing glass with ice and add 15ml of vermouth. Discard the vermouth and add the new make spirit, mineral water and celery bitters. Stir 17 times in each direction and double strain into a martini glass. Finish by squeezing the orange oils over the drink. Serve with a side of cheese and pickled onions.
